Theoretically, you two can register your marriage in China. You both need to prepare:
1. valid passports
2. single certificate issued by the marriage organ in your country. It has to be notarized in your country, authenticated by Chinese embassy in your country and then notarized again by Chinese notary office. Before you get it notarized by Chinese notary office, you need to find a qualified translation company to translate all your English documents into Chinese versions.
However, whether you can register your marriage successfully depends on whether local civil affairs office accept your application.
