We'd like to spend some time in Yunnan as we're interested in hiking and also in exploring the local culture. But I'm worried that to get to see the main sights (eg Leaping Tiger Gorge) we'd have to go over passes higher than 3000m which is theming at which I start feeling extremely ill with altitude sickness. Please advise!

Yes, it is possible. For natural attraction, you can go to Dianchi Lake and Haigeng Park in Kunming. They have much lower altitude and the scenery is good. For Hutiaoxia and Jade Dragon Snow Mountain, both of which are very popular, their altitudes are high. You should give them up.
