Based on the latest information I know, the 72 hours in Shanghai are counted from the 00:00 the day following the arrival day. It is confirmed from the officer at the immigration in Shanghai airport.

The 72-hour policy requires passengers to show their valid passport and onward ticket to a third country as well as a entry permit to visit the third country.
