Since you will go to South Korea for sightseeing, you are unable to apply there. In South Korea, only those foreigners who have ARC card with at least 6 months validity can apply in South Korea.

You can have a try in HK or Japan to apply. In general, you need to have your valid passport, an application form, a recent taken photo, your round trip tickets to China, hotel bookings and proof of legal status in HK/Japan. BTW, if you plan to apply in HK, you are suggested to apply through a tour agency. If you apply in Japan, you need to apply at the embassy/consulate in person.

Is this the same case if you have an invitation for a student X type? I am also staying in Korea on a 90 days tourist stamp, and am currently waiting for my invitation letter from a uni in Shanghai to be sent here to me.

Yes, you are right. It is the same case if you have an invitation letter for the student X. You need to try to apply it in another country instead of Korea. You can go to Japan to have a try.
