If I get return flights from Seoul can I get the 72 hour visa free thing?

I am teaching in Korea and want to visit China for 3 days on my long weekend.

So your route should be Seoul-China-Seoul, right? If so, you are not eligible for 72 hours free transit.

How about if I go from Seoul to China to Japan?

If so, it may be possible. Personally speaking, before you go, you can contact the airport for confirming, since Korea and Japan are close to each other and the officer may regard it a round trip.
