About:72-Hour Visa-Free Transit

Seoul - Shanghai - Hong Kong

If I fly to Shanghai from Seoul, am I correct in saying that I can leave the airport immediately, the 72 hours begins at midnight, I can travel around Shanghai, and then be back in the airport within 72 hours? I will then go to Hong Kong.
