My husband will be working in China and although our son and I are planning to stay with him I will be required to return to Australia for my sick mother on a number of occasions. Is the S1 type the correct one for me?

Yes, you should apply for S1 type. When you arrive in China with S1 type, you should go to local entry and exit management bureau to change it into a temporary residence permit within 30 days. Then you can enter and exit mainland China as you wish before it expires.
