About:Nanning - Hanoi Trains: T8701/ T8702

Hong Kong to Hanoi by train & Visa Catch 22

I want to travel from Hong Kong to Hanoi by train. I can only buy the Nanning - Hanoi ticket 18 days in advance. I need to apply for my China Visa in UK 6 weeks before departure, but I need to show proof of my onward travel out of China to get my Visa.
How do I solve this catch 22?
