You have UK's passport, right?
If so, you do not need to have one for HK, because UK people enjoy a 180-day free entry to HK. For China, you need to apply for a single entry Tourist L and you are suggested to apply it in UK.

Since you have an invitation letter, the hotel bookings are not needed.

Hi Larry,

You'd better apply for it in the UK. That will save you much time in Hong Kong.
If you have an invitation letter, that will be great. Please bear in mid that you also need inviter's Chinese ID or passport's photocopy.
