Firstly, Is it possible to get a visa on the same day if I go to the Chinese embassy in Sydney.  I need to fly in 7 days to Hong Kong for business in China.  Secondly, I then need to fly to Vietnam, must I book my flight out of Hong Kong before I arrive?

It is impossible to get it within one day. The fastest service for application is 2 working days. You need to apply that service, but it is not assured that your approval can get accepted. You are suggested to book that ticket to avoid any problems when passing the HK immigration.
