does this mean she will have to get a visa to visit her family in China?

My girlfriend is Chinese. She wants to get Irish citizenship.

Yes, after she gets Irish citizenship, she will become an Irish. Since China doesn't acknowledge dual citizenship, she must apply Chinese visas to visit her family.
