You are qualified for the 72-hour free transit policy.
You just need to tell the airline that you want to enjoy this policy when boarding the flight. It is no need to organize a permit ahead of time. Then upon reaching Shanghai airport, you can apply for a stay permit stamp at the immigration to leave the airport with your valid passport and onward tickets to Australia.
