How many entries do I need to enter China

I am travelling from Australia to Nanjing via brief 3 hour stop over in Hong Kong. After 5 days in Nanjing, I fly to Beijing for 5 days then onto Kuala Lumpar.

Also how long does the process take to obtain a visa if provided documents and information in person?
