For these 15hours do I need to apply for chinese visa? What about 5 hours?

Hi! My passport is from Costa Rica. I am flying from Toulouse to shanghai via turkish airlines and then within 5 or 15 hours I have to take hongkong airlines from shanghai to hongkong. Thank you
