About:Chinese Embassy in Cambodia

'Legal stay' What kind of documents is needed to show 'residency, legal stay'?

We are working in Cambodia, but come from Europe and wonder what 'legal stay' is needed,

If you plan to apply Chinese visa in Cambodia, you need to provide legal resident permit for employment in Cambodia. The resident permit for employment is the legal stay you referred.

What exactly is a legal residency permit for work? A visa? A confirmation by my employer (UN)?

A visa with remaining validity of more than 6 months is ok. You can confirm this with the embassy directly via 23-217086, 12-901937.
