What is the procedure when I arrive at Dalian railway station to get on the overnight train to Beijing?

There are two overnight trains bewteen the two cities, Z81/Z80 and K683/K682.

If you do not buy the train ticket, the first thing you need to find the ticket office to buy one ticket. If you already booked online, you need to go to the ticket office to collect your ticket with your passport.

Then, you need to pass the security to enter the Waiting hall of the station. Then try to find the platform on which you board the train. Waiting in the hall till you hear the announcement about checking your ticket. (Remember the train number, so that you can know the exact information). After checking the ticket, you can walk to board the train.
