I am working as an unpaid intern May thru 8/1 then  studying at a University in Hangzhou until 12/20.

Yes, it is ok to intern on an X type. But you should make sure to apply for residence permit within 30 days after entry, which you need help from your university. Otherwise, your X expires when your intern.
