About:Telephone & Cellphone in China

I am going to Guangzhou for ten weeks from Sat 29th March. I need a data sim...

I will probably buy a cell phone over there as my Samsung S3 is getting way to slow, can I get a data sim at the same time? I will also need to send and receive txt in English.

It's ok. You can have your new phone and sim card in China. The sim card can be bought from the telecom operator's branches. When you buy your new phone, you need to pay attention what modes it support. If it supports GSM and TD-SCDMA, then you should buy a simcard from China Mobile. If it supports GSM and WCDMA, you should buy one from China Unicom. If it supports CDMA only, you should buy simcard from China Telecom.
