About:Chinese Embassy in Singapore

For the Multi-Entry with 12-month Validity, I can actually travel in China for the one whole year? and not get out of China at all? My family is intending to travel around China for holiday as we have some friends staying in China.

For baby infant, 5 mths old. Is a visa required also? Can the infant apply for Multi-Entry with 12-month Validity?

No, 12-month is validity, you need to leave every CERTAIN days as what issued as "Duration of Each Stay". But you can reenter the same day of exit, so actually, you can stay full 13 months with it. Your baby also needs to get a visa, and you can apply at the same time. However, no one here can assure you if you can get multiple entries successfully or not, as the consular officers will make final decision.
