I think you plan is OK to reach HK first and then visit M on the last you leave.
For HK, you can head for the Ocean Park on the 19th first. After that, you can go back to the Admiralty by bus 629 and then use the Central Station. Then head for the Peak to enjoy the night scene on the mountain. It is wonderful. After that, if you live in Tsim Sha Tsui area, you can take the mtr to reach Jordan Station and walk to the Temple Street to have a taste of the local snack. If you live in Island, you can head for Causeway Bay area.
On the second day, you can head for the Ngong Ping 360 early in the morning. If you have kids, you can head for the Disneyland then. If you do not plan to go there, you can go back to the Tsim Sha Tsui area to reach the Star of Avenue and then shopping around that area.
For hotel, generally speaking, the hotels are expensive in that place. Would you mind tell me the budget, so that I can suggest you some reasonable ones.
For shopping, the Harbour City, the Sogo in Causeway Bay are suggested.

In M, the Fisherman Wharf, the Grand Lisboa, the Ruins of St. Paul, the San Ma Lo, the A-ma Temple and the Venetian are suggested in one day.
