For the hotel, it is suggested to live in Tsim Sha Tsui area and I think the Nathan Hotel is a good place to live.
For a seven-day holiday, it is suggested to spend about five days in HK and another two days in Macau.
In HK, the Disneyland, the Ngong 360, the Ocean Park, the Gaint Buddha, the Star of Avenue, the Peak, the Victoria Bay and the Science Museum are suggested for all of you to visit. I am sure you will like them. If your wife want to shopping and buy some cheap items, the Women's Street and the Harbor City are suggested. If you want to enjoy the local snacks, the Causeway Bay cannot be missed.
No visa is needed to enter Macau, but it is suggested to prepare the departure ferry tickets or the hotel's order in case of other emergency.
Hope these information can help you.
