It is possible for you to extend your current F, make sure submit your application for extension at least 7 working days before its expiry. The invitation letter, the original of the certificate of check-in in Shanghai (issued by the hotel or the police substation of the area where the lodging takes place); and the original and the copy of the Certificate of the Duplicate of Business License or the Representative Agency Registration Certificate and the organization code are required.

Sorry, if you want to work, you have to leave and apply for a work Z type directly. You can not extend your F to Z here.

PSB was changed their regulations. For the best way to solve your issue is contact the school and get them for help on your visa else you will get trouble. Is not only in Shanghai already changed the regulations there is in HK as well. FYI.
