Appointment is not needed. You can apply in person or assign your families, friends or agencies to handle it. If you just want to visit your husband, a family visit L type one is ok. You need to provide: your passport, filled application form, a recent passport size photo, the invitation letter from your husband and the marriage certifciate.

My husband is also American citizen and has to work there for a few months. He said that he will provide the invitation from the hotel where we are planing to stay. I am planing being there for 7-10 days. Also, I would like to get it during one business day. It is possible.

It is possible if you apply with Same-day rush service through Chinese embassy/consulate in USA: it can be obtained in the afternoon if application is submitted before 12:00 p.m. An additional fee of $30 per person will be charged. But if you apply in Ukraine (as you post the question here), you can contact the embassy directly for confirmation if they provide same day service for application.
