We need to be at the airport a week later for a departing flight at 6:20am (leaving from Sheung Wan). Just want to make sure the Airport Express will be available for service during these hours.Staying at the Ibis Hong Kong Central and Sheung Wan Hotel. Does the Airport Express service this area?

As for your hotel, it is best to transfer at HK Station by Express Train. As I know, the last train leaves the airport to HK at 00:48 and the first one leaves HK Station in the morning at 05:50. Therefore, you can take that to travel to your hotel, but to catch the plane for back journey, time is not sufficient at all.
