Entering and exiting by train.

I am doing a world trip and would like to enter china by train from vietnam and then leave by train into mongolia then transiberian. I understand i am required to have my flight bookings in order to get my visa. Is there any way around this considering how I am planning to travel? Thanks in advance, Ben.
