can the shuttle be boarded at the specified hotels without prior booking

Question

if i want to go back to the airport after my shopping can  i take the nearest shuttle from the specified list of hotels or do i have to the the route mentioned when i book around trip ticket

Well, you must refer to the free shuttle buses to Kowloon Station or HK Station. You can directly get on without a prior booking, just showing your proof of eligibility including Airport Express train ticket (Single Journey, Same Day Return, Round Trip, Airport Express Travel Pass) or Airline ticket / boarding pass.
