You can arrange your route like this:
3 days in HK and the must go places are: the Peak, Ngong Ping 360, Victoria Bay and Big Buddha. Since your kids are old enough, the Ocean Park and Disneyland are not suggested, but if you want to, they are really worth seeing. Besides, you can spend some time in Causeway Bay to taste the local snacks and shopping near Tsim Sha Tsui or Central area.
2 days in Shanghai. The Bund, Yuyuan Garden, Xintiandi and Oriental Pearl Tower are worth seeing. Zhujiajiao Water Town is also suggested to go.
3 days in Xian. Terra-Cotta Warriors, the City Wall, Shaanxi History Museum, Tang Dynasty Music and Dance Show, Bell Tower and Drum Tower are worth seeing.
3 days in Beijing. The Forbidden City, the Tiananmen Square, the Great Wall, Temple of Heaven and Hutongs need to go.
Above all, you may cost around 11 days in different cities which exclude the time on the way. If you contain the time on the way, you can only cover the four cities in about 15 days. Daily personal things and summer clothes are necessary.
