Yes, of course you can. Day trips are quite usual thing performed by many visitors from Hong Kong. You should just arrive at Lo Wu / Luohu border crossing by suburban train from Hong Kong. You will clear Hong Kong immigration procedures at Lo Wu and then arrive at Luohu (mainland Chinese counterpart crossing) where you will apply for a Shenzhen 5 day visa on arrival. All the formalities are done right at the border crossing. The price is an affordable 130 CNY. When asked about your address/accommodation in China/Shenzhen, you will just write it down - a day trip. When your day trip is over, you can return to Hong Kong by taking any border crossing and any mean of transport, high speed train included. Have a nice visit to Shenzhen.
