Well, your hotel is very close to Yau Ma Tei MTR Station. Due to the good location, here is my suggestion about your itinerary:
D1: Ngong Ping 360 (Giant Buddha) and Disneyland. At night, you can wander around Tsim Sha Tsui, including the Avenue of Stars and nearby shopping malls.
D2: Ocean Park - the Peak-Madame Tussauds. At night, you can go to Temple Street Night Market and China Habor Shopping Malls to have fun.
D3: Central-Causeway Bay to have a relax

To reach Ngong Ping 360, you can take the Tsuen Wan Line from Yau Ma Tei to reach Lai King to change to Tung Chung Line to reach Tung Chung Station. Upon reaching, the Cable car station can be easily found. Take it to reach Ngong Ping area and walk to see the Gaint Buddha. Then take the cable car to go back to Tung Chung Station where you can take it to reach Sunny Bay. At this station, you can change to Disneyland Resort Line to reach Disney. After that you can take the same route to reach TST Station to see the Avenue of Stars.
For Ocean Park, you can take the Tsuen Wan Line to reach Admiralty and then walk to Admiralty West to take bus 629 to reach the Ocean Park directly. Take the same bus to reach back to Central where you can easily find the tram of the peak. Take the peak tram to the peak and see the Madame Tussauds. Then take the Tsuen Wan Line to reach TST area to visit the Temple Street and other places.
Take the Tsuen Wan Line to reach Admiralty Station where you can change to Inland Line to reach Causeway Bay.
Hope these routes are clear for you. I suggest you to find it with the help of Google map.
