Comparatively, I recommend Novotel Century Hotel more between the two. It is located in the downtown area and has very convenient transport.

As for your itinerary, the general framework is ok. Here is my simple suggestion;
D1: During your peak travel, you can also enjoy the Madame Tussauds and the Peak Tower. After that, go down the peak and go to the Vistoria Bay, where you can appreciate Symphony of Lights at night. After that, if you have time left, Temple Streer Night Market along the bay deserves a visit.

D2: After your visit at Ocean Park, you can wander at Central. Then Causeway Bay should be followed.

D3 and D4's plan is good enough. After the whole day travel at Disneyland, you can go back to Tsim Sha Tsui to Ladies Market and other shopping malls. Ngong Ping 360 and Giant Buddha should not be missed. Meanwhile, you can shop at Citygate nearby with great discount.
