Applying for tourist visa in China

I am from Canada and I will be travelling in Turkey (I will be there on a tourist visa, not as a resident) and I would like to apply for a 30 day tourist L in Istanbul. Is this possible? What documents will I need? Will I need to show copies of my flight tickets?
Also, I will only have two days in Istanbul before flying to China. Is it possible to pay extra to have it processed in the same day?
