About:Chinese Embassy in U.K.

visa and insurance requirements, I am living in thailand

Hi, I am a UK national living in Thailand. I hope to fly from here to Kumming for 3-4 weeks, can I get a China visa in Chiang mai for me and my Thia girlfriend?
Also, is travel insurance obligatory, as it's hard to find when living outside of my own country

I think travel insurance is not obligatory for you. You can try to apply in Chiang Mai.
