Visa application in HK for Canadian Passport holder

I am going to China at the end of April for approx. 10 days, however my first stop is going to be in Hong Kong. Is it possible to apply for a single entry tourist visa for China when I arrive in Hong Kong if I hold a Canadian passport?

It is possible, but it is said that the policy in HK has getting tough. A single entry China visa is good for 3 months after issue date, so you'd better apply in advance in Canada if your stay in HK is not that long.
