i'm a canadian national visiting egypt, but i just got an offer to work for chinaesl.

Question

Employer is asking for a copy of my passport in order to send me an invitation letter. Employer says they will pay for my Visa, but I have to apply? Do I go to the Chinese Consulate of Egypt to apply? How do I get the work permit?

I'm afraid you can't apply for the ivsa in Egypt as a visitors there, but you can change to do the application in Hk. The work permit should be provided by your Chinese employer from the local Human Resources & Social Security Bureau.
