Australian in USA needing to apply for tourist visa

I am an Australian passport holder that is currently in United States for work. In 2nd week of October I will be going to Beijing for an education event.

How would I go about applying for tourist visa if I am based in Arizona, and what documents are required?

You need to submit your application to Consulate General of PRC in Los Angeles. For education event, the right visa type should be F. But if you do not have invitation letter from China, you can apply for a tourist visa instead. Documents are your passport, application form V2011A and V2011B, photo, permit for work in US, copies of the roundtrip airline ticket and hotel reservation.
