We will be going over the border to Shenzhen for a day of shopping then off to Beijing and xian before heading home via hong kong again. Could you please let me know if I need a visa for hong kong and if I need to apply for a single entry or multiple entry visa to china?

Australians don't need a visa to Hk for not more than 90 days, but you do need a China visa to visit Shenzhen, Beijing and Xian in mainland China. According to your itinerary, a single entry China visa is enough.
