Travel by car

would like to know what we have to do to be able to drive our car through China from Vietnam to Tibet exiting through Nepal. Returning from India a year later and driving to Mongolian border via Beijing.

To be frank, I don't think your travel plan will work. If you don't have drivers license of China, you will be forbidden to drive in China. I think the thing is the same in other countries like Vietnam, India and Mongolia. Meanwhile, you have to apply for a visa and a Tibet entry permit for your trip to Tibet. You may also have to apply for a proper visa for your trip to Vietnam, Nepal, India and Mongolia.

Think you would need to be crazy and/or suicidal! If you bring your own car it would be right hand drive for starters. There appear to be few road rules in any of these countries, other than to use your horn excessively. Tibet is currently closed to international tourists. The road from Tibet into Nepal via the Friendship Bridge is the most terrifying drive I have ever done. There are frequent landslides and the very narrow roadway is in bad repair and snakes around sheer cliffs.
Mongolian roads are very bad, you would need a four wheel drive for both Tibet and Mongolia. Fuel is also scarce in Tibet. Travelling with the locals, rather than being insulated in your own vehicle can bring unexpected rewards.
