I will be staying in Hong Kong for five days in September before travelling through China. Is it possible to buy tickets for trains from Shenzhen to Guilin from an agent in Hong Kong ?

Yes, it is possible to buy the tickets from travel agencies. There is travel agency provide the service to book the tickets online and after that they can send it to you.
