First of course stay in the soft sleeper is more comfortable.
Second 4 bunks locate in the soft sleeper cabin and a door will protect the noise coming from outside the cabin and for the hard ones, there are no doors.
For Beijng to Shanghai, there are G trains, which will take you only about 6 hours. You may book the 2nd class tickets, which are cheaper.
