shanghai to hong kong train

Question

Me and my sister (both South Africans) will be comming from Shanghai to Hong Kong.Will we allowed to book the trains ticket online from South Africa or South Korea before we come to China and how will that work? will we be able to get a map of Hong Kong at the train station? Will we be able to buy the Octopus Card at the train station?
