About:Apply for China Visa in a Third Country

Go thru immigration to get on the next flight in Shanghai airport will it count as one entry?

I am coming to Shanghai from Amsterdam and need to go through immigration to get on the next flight with different airline to HK will this count as one entry to China

Yes, it is counted as one entry to China, but a transit visa is not required for less than 24 hours transit, can you tell me your nationality? As I know, nationals from 30 countries enjoy visa free access for 48 hours transit in Shanghai, leaving the airport is allowed.
