Canadian Citizen - need Chinese tourist visa in Ho Chi Minh

Hello! I am a Canadian Citizen who will be traveling to Ho Chi Minh at the end of January. I was wondering how long it would take and if it was possible to get a Chinese tourist visa. I am only there for a few days and was wondering if there was a rush option!
