Duration of stay in China for the visa applied in a third country

I am an American passport holder. Do the visas for China issued in Japan have 30 day stay maximum restrictions?

No, there is no such restriction. But the visa applied in a third country is usually a single-entry with 30 days duration of stay. If you want to stay longer in China, you can extend it after entering China. FYI: https://www.travelchinaguide.com/embassy/visa/extension.htm
