My husband and I are having 2 nights in Beijing before boarding a cruise ship for 16 nights visiting Shanghai & Hong Kong. Do we have to have a multi entry visa for tourists?

You need a double entry tourist visa if only visit Beijing and Shanghai. Australian citizens don't need a visa to Hong Kong.
