How can I get a re-entry visa in China?

I am a student in Beijing. I am planning to visit Vietnam for 7 days in early October. I obtained my student visa in Hong Kong but they were not able to provide me with a double entry visa. Now that I am Beijing, how can I get a visa which will allow me to leave Beijing, enter Vietnam, return to Beijing then return to the US. I currently have a student visa into China (obtained in Hong Kong) and leaving in mid-December.

Is your student visa an F visa or X visa? If it is an X visa, you need to change it to a temporary resident permit upon arrival within 30 days. A temporary resident permit functions as a multiple entry visa, with which you can enter China without limits.
If it is an F visa, you can only get a China tourist visa in Vietnam ( the chance is slim since you don't live there) or go to HK again to apply for another F visa or tourist visa to re enter China mainland.
