May 10. Temple Street Night Market is open until 12:00 at mid-night, so you can go there after Disneyland. Just take disneyland resort line to Sunny bay, transfer to Tung chung line to Lai king to take tsuen wan line to Yau Ma Tei, exit from Exit C, and then walk to the street.
May 11: Senado Square, Ruins of St. Paul, Monte fort, A-ma Temple, Macau Tower, Venetian
May 12: Yes, it's possible to Victoria peak. You can just take bus no. 629 to Admiralty Road, transfer to bus no. 15 to victoria peak. The peak tram is HKD28 fro a single trip and HKD40 for a round-trip. The entrance fee of Sky Terrace is HKD30, and that of Madam Tussauds is HKD160. After Victoria Peka, I advise you go to TST to visit Symphony of lights by star ferry. For shopping, temple street night market is a good choice.
May 13, I don;t think you have time to visit Ngong Ping 360 before taking the plane. You have to be at the airport about 2 hours in advance, since it is always crowded at the airport.
