Dear sir,

I'll will go to beijing in April for a 7 days tour, I will bring my canon camera with me, I heard I have to pay duty for my camera when enter the customs. Is that true? or I have to fill out some declaration form to prove that I own this camera and show it to customs when I leave peijing.

No. It is ok to bring you Canon camera. Just bring in and not necessary to declare. If you bring many or a brand new Ipad, you should pay tax. This dosn't applies to personal stuff and you just bring one.
