You don't have to rent the Octopus Card as soon as arrive in Hong Kong. In fact, if you will not stay in Hong Kong more than 5 days, I don't think the card is very necessary.

Your hotel is located in walking distance to the Jordan station of Hong Kong metro's Tseun Wan Line. To Ocean Park, you have to take the metro to Admiralty firstly and then transfer to bus 629 to the park. The metro fare is HKD8.5/adult and the bus fare is HKD10.6/adult. To Disneyland, you should take the metro to Lai King and transfer to Tung Chung Line to Sunny Bay. Finally, from Sunny Bay, you could take the Disneyland Resort Line to the park. The metro fare is HKD18.5/adult. You'd better see a Hong Kong MTR Map which could show you the way clearly.
