Your schedule is Ok. you may take a taxi or bus no. A21 from the airport to shamrock hotel directly. Then, the next day, take Hk metro tsuen wan line from jordan to Lai King, transfer to Tung Chung line to sunny bay, change to disneyland resort line to disney. Then on your way back, you can take tsuen wan line from lai king to Tsim Sha tusi directly to enjoy avenue of star and symphony of light.
Day 2, take tsuen wan line from Jordan to admiralty to take bus no. 629 to ocean park. Then take bus no. 629 back to admiralty to take bus no. 15 to victoria peak. Then take bus no. 15 to Central, transfer to bus no.6, 6X, 260 to repulse bay. Lastly, take bus no. 6x to stanley market.
day 3, take tsuen wan line from jordan to TST to take a ferry to Macau. I think you should buy an octopus card which can be used on almost all of the transportation in HK.
