You can take the airport shuttle bus line 6A to Guangzhou Tianhe Bus terminal and take bus there to Shantou. It runs from 07:10 to 01:30 the next day on a frequent interval. It costs about CNY180. If you want to take subway to Haizhu Plaza, you can take subway line 3 from the airport to Jiahewanggang and transfer to line 2 to Haizhu Plaza. Well, the airport shuttle bus line 5 can directly take you to Haizhu Plaza. It takes about 40-50 minutes and costs CNY20.
